Mustard oil has natural preservative properties. The allyl isothiocyanate compounds in cold-pressed mustard oil inhibit bacterial growth naturally. That's why our ancestors didn't need artificial preservatives. A generous layer of oil seals the pickle from air, while the compounds themselves keep spoilage at bay. Refined vegetable oils don't have this property — which is why mass-produced pickles rely on chemical preservatives instead.
